Brekkie Salad

(Makes 1 serving)

  • 2 cups of greens - anything medium-dark green! Purple is good too!

  • 1/4 cup chickpeas or a couple of warm falafel balls 

  • 1/8 cup sauerkraut - the properly fermented good stuff!

  • 1/4 cup cucumber, chopped

  • 1/2 carrot, shredded 

  • 1/2 an avocado, sliced or mashed

  • 2 lemon wedges - 1 for avocado and 1 for sprinkling on the greens

  • Sprinkle of rice paper "bacon" (optional)

  • 1 tbsp extra virgin olive oil

  • salt and pepper to taste

Place greens in your bowl and add lemon, oil, salt and pepper. Mix it up so all leaves all covered. Add the rest of the ingredients on top!

To make the "bacon", with a REALLY sharp knife, cut into strips (they will shrink slightly when cooking so make them thick). Place two strips on top of each other and dip into water so that they stick together. Place the wet strips on a tea towel. Repeat with all strips. Whisk the rest of the ingredients together and cover the rice paper with it. Place the strips onto paper towel and cook in the microwave for 45 seconds (note microwaves tend to cook differently so this time might be slightly more or less for you! They should be nice and crispy when they come out. If still chewy, cook for a few more seconds). When slightly cooled, they'll crisp more and you can break into pieces for "bacon bits"!

Rice paper "bacon"

  • 8 sheets of rice paper (large size)

  • 2 tbsp olive oil

  • 3 tbsp soy/tamari/coconut aminos

  • 3 tbsp nutritional yeast

  • 1/2 tsp liquid smoke

  • 1/2 tbsp maple syrup (optional)

  • 1 tsp black pepper

  • 1 tsp smoked paprika
