Tofu Scramble
(makes 2 servings)

1 block firm tofu (pressed and then chopped)

1/2 cup mushrooms, chopped

1/3 cup sweet corn kernals

1/2 cup beans of choice (I like black beans with this!)

2 cups kale, broken up with your hands
-
1/2 a yellow onion, chopped
-
2 garlic cloves, minced (or to taste)

2 tbsp nutritional yeast
-
2 tsp turmeric OR cumin
-
salt and pepper to taste

oil of choice to cook with- one that has a high (I like olive or coconut)

To "press" tofu, place paper towel underneath and on top of tofu and then place something weighty on top. This draws out extra moisture from the tofu. Prepare other veggies in the meantime - about 15-20 minutes should be enough.
Heat oil over medium heat and add onions. Cook unti translucent, then add garlic. After 1 minute, add all ingredients except the kale. Stir occassionally, breaking up the tofu into a "scramble". Once all the veggies are cooked through, add kale for just a minute so it goes soft but doesn't get overcooked!

You can serve with toast or with some roasted potatoes! Add hot sauce if you like too!
