Carrot Cake oats
(One light serving)

¼ cup plain coconut yoghurt

¼ cup organic oats (or raw buckwheat)

½ cup unsweetened almond milk (not coconut - it will be too thick with the yoghurt)

1 tbsp chia or flax seeds
-
½ tsp vanilla extract (should be good quality! Check ingredients - no added sugar)

Pinch unrefined salt

1 tbsp maple syrup (or to taste)

1 medium sized carrot, shredded

â…› cup raisins or currants of choice

1 ¼ tbsp sheese cream cheese (or other plant-based variation such as Toffuti)

½ tsp ground cinnamon (or to taste)

Add all ingredients to a glass jar or cup and using a fork, mix all ingredients together until well combined. Cover and then place in fridge overnight or a minimum of 4 hours.
